Ingredients
Serves: 2 cups
To Roast the Garlic:
1 head garlic
2 Tbsp. extra virgin olive oil
salt and pepper to taste
For the Hummus:
1 (16oz) can chick peas, drained
3 Tbsp. lemon juice
2 Tbsp extra virgin olive oil, plus extra for garnish
salt and pepper to taste
3 cloves of the roasted garlic (use more or less depending on how garlicky you like things – spread any leftover cloves on bread or add them to salads and pastas!)
a sprinkle of paprika, for garnish
optional: baby carrots, to serve with the hummus
