Wrapped in a whole-grain tortilla
Topped with enchilada sauce and cheese
Cilantro Rice:
2 cups of cooked brown rice
For the cilantro sauce:
1 c. cilantro
2 garlic cloves
2 T. olive oil
4 Scallions
Sea salt and Pepper to taste
Veggies:
2 zucchini
1 bell pepper
1/2 large onion
2 large garlic cloves – pressed
1 t. or more to taste of Chili Powder

4 chicken breasts
olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp sea salt
1/4 tsp pepper
1 tsp smoked paprika
1 tsp ground cumin
