2 or 3 fist sized beets, peeled and sliced thinly
1 medium-large sweet potato (two fist sized), peeled and sliced thinly
1 medium onion, diced
2 or 3 cloves garlic, finely minced
5 tablespoons butter, divided (olive oil can be substituted)
1 tablespoon fresh thyme leaves, lightly chopped (1 teaspoon dried)
½ - ¾ cup chicken or vegetable broth
salt and pepper to taste
chopped parsley for garnish
