2 cucumbers, seeded and diced
1/4 c diced red onion
fresh cracked pepper

Buttermilk-Pesto Dressing:
1/2 c light buttermilk
1/2 c plain Greek yogurt
1 T Basil Pesto (or store-bought)
pinch kosher salt
