Zucchini Fritters with Fried Egg

Use chickpea flour without eggs for a gluten free batter. Or, use eggs and bread crumbs to hold the fritters together.


2 cups grated zucchini
1/2 medium onion, minced as small as you can
1/2 cup chickpea flour (2 eggs, beaten )
3 tablespoons grated parmesan cheese (try manchego, a Spanish cheese if you can find it)
1/4 cup chopped parsley
salt and pepper to taste
1/2 teaspoon paprika (I use Pimentón de la Vera)
(1/2 cup bread crumbs)
olive oil for frying
a fried egg for each person
