4, 6 ounce catfish fillets - U.S. farm raised1/2 teaspoon salt 1/4 cup lemon juice 2 tablespoons parsley - minced2 tablespoons garlic - minced3/4 cup cornmeal 1/4 cup all-purpose flour 1 cup vegetable oil fresh parsley - garnishlemon - wedges for garnish1 tablespoon creole seasoning - like Emeril's Essence, or make your own (see below)

Creole Seasoning:
2 1/2 tablespoons paprika
1 tablespoon dried oregano
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
2 tablespoons salt
1 tablespoon cayenne pepper
1 tablespoon dried thyme
