Vegetarian Rolls with Apricot Sauce

(Makes 6 pieces of Vegetarian Rolls)

For marinating the paneer:
2 small bunches of coriander. Cut off the bottom stems
2 cloves of garlic
4 Thai chilies (optional)
2 tsp of salt
½ cup of water
½ cup of sour cream (or less if you like the color of the chutney to be green)
1 tsp of sugar

For the Vegetarian Rolls:
6 Rice papers
1 12oz packet of paneer block
1 cup of shredded red cabbage
1 cup of shredded carrots
6 Mint leaves
½ of a red onion
1 yellow bell pepper (or choose your favorite bell pepper)
6 Sundried tomatoes
3 tsp of olive oil
½ tsp salt
½ tsp fresh ground pepper
About 10 pieces of soba noodles
Bowl of warm water for the rice wrapper
