Dice tomatoes and chop onion,and all peppers.
Mince garlic.
Add all ingredients except the cornstarch to a pressure cooker or slow cooker. Cover and turn on your pressure cooker to high and let it come to pressure. Then cook for 18 minutes.
In a slow cooker cover and cook on low for 8 hours or high for 4.

1.5 pounds pork roast
4 cups chicken broth
8 roma tomatoes, diced
1 large onion, chopped
2 Anaheim peppers, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cloves garlic, minced
1 tsp salt
2 T cornstarch or flour
1/4 c water
1 T shredded cheese, optional
a sprinkle of cilantro, optional
