For the filling:
1 cup Medjool dates, pitted
2 tablespoons pure maple syrup
2 tablespoons coconut oil
1 cup raw pecans
1/4 cup water, or more as needed for blending
1/4 teaspoon fine sea salt
1 cup of additional pecans, for topping
Optional: 1 1/2 cups dark chocolate chips, divided for filling/topping
