A delicious Valentine's day treat, these macaron ice cream sandwiches are the perfect, bite-sized sweet!

For the chocolate macaron shells:
2 egg whites
10g cocoa powder
25g caster sugar
65g ground almonds
135g icing/confectioner's sugar

For the strawberry ice cream:
1 tbsp caster sugar
1 tsp vanilla paste
3 egg yolks
70g caster sugar
300g strawberries, diced
600ml double cream/heavy cream
