These huge bakery style banana muffins are a delicious addition to your weekend brunch.

Yield: 1 dozen large muffins

nonstick cooking spray
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
10 tablespoons unsalted butter, at room temperature
1 cup packed light brown sugar
2 large eggs
1 1/2 cups plain yogurt (low-fat or whole milk)
1 1/2 cups chopped bananas (2-3 medium sized bananas)
3/4 cup coarsely chopped walnuts
