Salt/Pepper/Cooking Spray (Needed if you will be grilling the chicken)

2 Tbsp Fresh Lemon Juice
2 Tsp Dijon Mustard
1 1/2 Cups Nectarines, Pitted and Sliced
1 Cup Cooked Brown Rice
Grapes
1/2 Cup Sliced Green Onions
1/4 Cup Dry Roasted Chopped Almonds (Optional)
3 Tbsp Torn Mint (Optional)
