4 cups Red Potatoes, sliced 1/8 inch thin
3/4 cup crumbled Blue Cheese
½ cup grated Gruyere cheese
2 garlic cloves
1 sprig fresh thyme
2 cups heavy cream
½ tsp kosher salt plus more

Caramelized Onions:
2 small (or 1 large) Onions, sliced thin
olive oil and butter
kosher salt
pinch of sugar
