Stir fried until tender and crisp with all the goodness but much less fat than the usual deep fried version.

Ingredients

Serves 4

Sauce:
1 tablespoon cornstarch
1/2 cup water
2 cups snow peas, trimmed and halved diagonally
4 garlic cloves, sliced
2 teaspoons grated fresh ginger
3 tablespoons light brown sugar
2 tablespoons soy sauce
1/4 – 1/2 teaspoon red pepper flakes

Chicken and Coating:
2 large egg whites
3 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound chicken, cut into bite-size pieces
