4 lbs. bone-in beef shins or chuck

2 lg. beets, peeled and cut into thin julienne
3 Tbsps. red wine vinegar
1/2 lb. smoked pork butt
2 Tbsps. unsalted butter
1 onion, cut into small dice
1 carrot, cut into small dice
1/2 celery root, cut into small dice
1 sm. head white cabbage, shredded
3/4 lb. potato, peeled and cut into cubes
1 sm. tart apple, peeled, cored, and cut into small dice
3 Tbsps. tomato paste
black pepper, freshly ground
1/4 cup fresh parsley, minced
2 Tbsps. salt pork
1 bay leaf
