Ingredients

1/2 cup fresh herbs rosemary, oregano, thyme, sage
1/4 cup brown sugar
1/8 cup kosher salt
1 tablespoons fennel seed
5 coriander seeds
5 black peppercorns
2 juniper berries
3 bay leaves
1/2 quart hot water
1 1/2 quarts ice water
1 tablespoon olive oil
3 pounds bone-in chicken legs you can use breast, just cook for less time (and lower temp for sous vide)
