Ingredients

2 soft tofu, sliced and fried
4 carrots, cut to 2" long pieces
1 lb trumpet mushrooms, cut in chunks
2 stalks lemongrass, cut to 4" long pieces and smashed
1 shallot, minced
2 cloves garlic, minced
2 tbsp light olive oil
3 star anise
½ tsp five-spice powder
¼ tsp salt
¼ tsp sugar
? tsp ground black pepper
2 tbsp vegetarian fish sauce or 1 tsp vegetarian seasoning
4 cups vegetable broth
1 loaf of French baguette or brown rice
