Ingredients
Olive oil- 2 tbsp/ 30 ml
Salmon Fillets- 4
Onion- 1 large (finely sliced)
Tomatoes- 2 (sliced)
Mild Cheddar Cheese- 4-5 slices
Smoked Chorizo sausage- 1 ( If you can’t find these Chilean sausage, use bacon or any sausages)
Dried oregano- 2 tbsp / 10 ml
Fresh Rosemary- 1 tbsp (finely chopped)
Lemon (optional)-1 (sliced)
Salt- To Taste
Black Pepper-To Taste
Serve with potatoes or salad.
