A serrano/garlic quinoa topped with pan-seared swordfish, avocado, tomatoes, a cilantro lime sour cream sauce and pickled goodies!
Ingredients
FOR THE QUINOA
1 cup quinoa
1 serrano pepper, chopped
2 cups chicken broth
2 cloves garlic
FOR THE FISH
2 filets swordfish (or other white fish)
2 teaspoons ancho chili powder
½ teaspoon cumin
½ teaspoon cayenne
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
FOR THE CILANTRO-LIME SAUCE
2 large jalapenos, seeded and diced
¾ cup sour cream
¼ cup lime juice
2-3 tablespoons cilantro (leaves and stems)
TO ASSEMBLE
Limes, for garnish
Pickled veggies (optional)
