This is a favorite recipe at our house! My husband's coworkers ask for it every time his company has a potluck. Mine is a bit different in that it has flour tortillas instead of corn, and it has black olives.

Ingredients

2 pounds lean ground beef (80/20 is my preference)
1 tablespoon dried minced onion (or fresh equivalent)
1 teaspoon black pepper
1 teaspoon garlic powder
2 small (2.25 ounces) of sliced olives (sliced works better than chopped)
19 ounce can (or the equivalent, can be slightly more) of red enchilada sauce
6-8 flour tortillas (taco size)
3-4 cups of finely shredded Mexican/fiesta blend cheese (I usually split the difference)
