13 oz butternut squash, sliced into small cubes
1/2 white onion, sliced
1 Tbsp olive oil
8 oz penne, or pasta of choice
1/2 cup reserved cooking pasta water
2 Tbsp unsalted butter, melted
1/2 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella
1/2 cup grated parmesan cheese
additional shredded cheese of choice for topping
kosher salt and ground black pepper, to taste
