2 jalapeños finely diced, seeds and membranes removed (or leave them in for a bit of heat)
3 green onions finely sliced (plus more for topping)
1 lime, juiced
½ cup almond milk (or whatever milk you have on hand)
4 oz. cream cheese melted
8 oz. sour cream
8 oz. cheddar cheese, shredded
½ teaspoon salt
½ teaspoon pepper
1 teaspoon smoked paprika
21/2 pounds (41/2 cups) frozen sweet corn kernels (I prefer baby corn and a combo of white & yellow.)
Optional Toppings:
2 slices bacon, cooked and finely chopped
1 Green onion finely sliced
handful of Cilantro chopped
