1 large onion, chopped
2 tbsp tomato purée
1 tablespoon Worcestershire sauce (use a gluten free variety)
500ml gluten free beef stock
4 medium/large potatoes, peeled and cut into large chunks
2 tablespoons dairy free margarine (I use Earth Balance)
2 tablespoons arrowroot powder or cornstarch (optional)
1/2 cup shredded cheddar cheese - optional (I used Daiya dairy free)
salt and pepper to taste
