his Pineapple coconut curry is very famous in Goa(India) where we also prepare mango curry(Ghotache sasav) with the same ingredients as mentioned here . Anas or Ananas means Pineapple and sasav means you temper it with mustard seeds. So the recipe is very simple and quick.

Ingredients:
1 Cup of pineapple chopped into fine pieces
1 Tablespoon of Oil
1 Teaspoon Mustard seeds
Pinch of Hing/Asafetida
6-7 curry leaves
Salt to taste
Masala to grind:
1 Cup shredded coconut fresh/frozen
1 Teaspoon mustard seeds
A Small ball of Tamarind
3-4 red chillies
1 tablespoon of jaggery(Adjust as per your preference)
