1 head cauliflower, cut into florets.
2 tsp extra virgin olive oil
1/4 cup chopped green onion
1 medium carrot, shredded
1/2 cup chopped red cabbage
2 Tbs chopped Italian flat-leaf parsley
kosher salt and fresh cracked pepper (to taste)
