My go-to soda bread is this wholesome version lightly fragranced with thyme and the added texture of walnuts. I’m guaranteed to have the ingredients ready-to-go in my cupboards (I’ve used fresh thyme here but dried works perfectly too), and it could not be quicker or easier to make.

250g wholemeal flour
200g spelt flour
50g rolled oats
1 tsp salt
1 tsp bicarbonate of soda
2 tbsp dark Mörk Sirap
4 stripped sprigs of thyme
50g chopped walnuts
450ml buttermilk
