2/3 cup long-grain brown rice, uncooked
1/3 cup wild rice, uncooked
1/2 tsp salt
Olive oil, for drizzling on squash
1 small butternut squash, peeled and diced into 1/2" pieces
2 Tbs. coconut oil
8 oz. package tempeh cut into 3/4" cubes
1 Tbs. maple syrup
1 Tbs. low-sodium soy sauce or tamari
1/2 tsp. chili powder
1/4 cup dried cranberries
1/4 cup chopped pecans
2 tsp. lemon juice
zest of one orange
1 Tbsp. orange juice
salt and pepper, to taste
pumpkin seeds, for sprinkling
chopped fresh parsley, for sprinkling
