Step 1 :In medium saucepan over medium high heat, add olive oil, sliced onion, fava beans, salt & pepper and saute for 10 minutes
Step 2 :Add 2 cups chicken broth, reduce heat to a simmer and cook for 40 minutes or until fava beans are softened.
Step 3 :Remove from burner and puree with immersian blender.
Step 4 :Check for seasoning, drizzle a bit more olive oil and pour onto serving plate to cool

2 cups fava beans (yellow split peas)
1 large yellow onion, sliced (reserve a few slices for garnish)
¼ cup olive oil
2 cups chicken stock
1 tablespoon greek truffel oil
Salt & pepper to taste
¼ pound smoked eel
1 tablespoon fresh thyme
