1 ounce of sharp cheddar, grated
1 ounce of pepper jack cheese, grated
1 teaspoon chives, finely chopped plus more for garnishing
1/4 teaspoon of finely minced garlic
fresh black pepper to taste
7 slices of uncooked bacon, cut in half
