Kung Pao Chicken:
2 Tablespoons vegetable or peanut oil
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 red bell pepper, cored and diced
1 green bell pepper, cored and diced
2 cloves garlic, minced
1/2 cup peanuts
4 dried red Chinese or arbol chili peppers, seeds removed and finely chopped*
1 batch Kung Pao Marinade (see below)
garnishes for serving: thinly-sliced green onions, toasted sesame seeds
Kung Pao Marinade:
1/4 cup water
3 Tablespoons soy sauce
2 Tablespoons rice wine vinegar
1 Tablespoon cornstarch or arrowroot powder
1 Tablespoon honey
1 teaspoon toasted sesame oil
1/2 teaspoon ground ginger
1/8 teaspoon white pepper
