A cornerstone of Jamaican cooking, jerk is a play of sweet and smoky, spicy and herbal and can be credited to the Maroons, Africans who were brought to Jamaica and helped fight off British and Spanish dominion over the island. Jerk refers to the way a meat, fish or vegetable is seasoned and cooked- typically with a marinade or paste that includes a heavy dose of allspice, thyme and chili peppers
Ingredients
Serves 8-10
1 pound white fish fillets
For the marinade:

4 spring onions, chopped
1 inch ginger, grated
4 garlic cloves, crushed 2 tbsp fresh thyme 2 tbsp canola oil 2 limes, juice and zest 2 tbsp white vinegar
1 tbsp kosher salt
1 tbsp dark rum (optional)
