For the Sticky Toffee Cakes:
2/3 cup dark rum (such as Gosling brand)
1/2 cup chopped dried dates
1/2 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, softened
1/2 cup light brown sugar, lightly packed
1 large egg
1 tablespoon finely grated ginger
1/2 teaspoon vanilla bean paste (extract may be substituted)
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
For the Butter Rum Sauce:
1/4 cup granulated sugar
1/3 cup water
1/4 cup heavy cream
1 tablespoon unsalted butter
a pinch of kosher salt
1 tablespoon dark rum (optional)
