A cross between an omelet and a soufflé, this brunch-friendly dish fresh strawberries and caramelized almonds combine with a delicate, open-faced omelet to create a spectacular springtime presentation. (Pssst! It’s much easier to make than its name might suggest.) Dairy-free & Gluten-free

1/2 cup sliced almonds
2 tablespoons pure maple syrup (honey works equally well)
6 eggs, separated
2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
2 tablespoons butter
Powdered sugar
1 pound fresh strawberries, slices (about 3 cups)
