125ml (1/2 cup) white wine – optional
2 tbsp olive oil
1 small onion
1 clove of garlic
200g (1 cup) risotto rice
1 tbsp vegan butter
2 tbsp nutritional yeast
salt to taste
8-10 broccoli spears, or 200 g (7 oz) broccoli florets
