Put your peanut oil in the FireDisc grill to about half full. Set your FireDisc to high and bring temperature to 375 degrees. Use a Thermapen to make sure you are up to temperature before frying your filets. After covering your fish filets with the seasoned corn meal, drop each filet carefully into the oil. Turn the fish once or twice and fry until the filets float and become golden brown.

Soft flour tortillas (large)
Peanut oil
Fresh cilantro
12 jalapeño slices
Pepper jack cheese (shredded)
Salsa
Chipotle cole slaw (see below)
Sriachia sauce (optional)
