6 large red bell peppers, quartered and membrane removed
2 heads of garlic, roasted **see notes
2 tbsp olive oil
1/2 medium onion, diced
2 tbsp butter (I used Melt (vegan))
1 cup vegetable broth (can sub chicken broth)
1/4 cup heavy cream
1/4 cup almond milk (can use regular milk)
1/2 cup grated parmesan
16 oz fettuccine, cooked to package instructions
salt and pepper to taste
