Jumbo shells stuffed with Ricotta, mozzarella, and a filling of your choice, then baked in a homemade Marinara sauce.

2 tbsp extra virgin olive oil
2 tbsp garlic minced
29 oz diced tomatoes (2 14.5 oz cans), unsalted
1 tsp thyme fresh (or 1/2 tsp dried thyme)
1 pinch salt to taste
12 jumbo shells
1 cup ricotta whole milk
2 cups mozzarella cheese shredded and separated
1 egg
1/2 cup filling of your choice such as spinach, chives, ground meet, etc
