For the cupcakes:
115g unsalted butter, room temperature
250g caster sugar
2 large eggs, room temperature
½ tsp vanilla extract
8 passion fruit (5 tbsp of the juice to be used for the batter, extracted from fresh fruit)
200ml whole milk, room temperature
1 ½ tsp baking powder
225g plain flour
½ tsp salt

For the white chocolate frosting:
240g unsalted butter, room temperature
500g icing sugar, sifted
3 tbsp passion fruit juice, extracted from fresh fruit
125g white chocolate, roughly chopped
½ tsp salt
