2 teaspoons ground cumin

1/8 teaspoon red pepper, to taste
3 garlic cloves, minced
4 pounds boneless pork loin roast
2 onions; cut into wedges
1/2 cup carrots, cut into wedges
1 cup peeled potatoes, cut into wedges
1 teaspoon salt, to taste
1 teaspoon black pepper, to taste
