These Carrot Cake Cupcakes with cream cheese frosting are delicious and moist and truly the best carrot cake I’ve ever had.

2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
3 eggs
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
2 teaspoons of vanilla
3 large carrots, finely grated or processed (about 2 cups)
1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 cup sugar
11/2 teaspoons baking soda
1/2 cup buttermilk
1/2 cup butter
1 tablespoon light corn syrup
1 teaspoon vanilla
