Ingredients

For the sponge:
35 g flour
25 g ground almonds or almond flour
16 g of pure cocoa powder (to my like to use value or Valrhona)
123 g eggs
58 g of egg yolks
74 g of egg whites
111 g sugar
23 g of sugar

For the cream:
250g of very cold liquid cream with at least 33% fat
15 g of sugar powder 0.01 1 tsp vanilla extract (in this case I used transparent scent to not alter the color of the cream)
10g of gelatine
Four tablespoons of Strawberry Jam

For chocolate glaze:
7.2 g gelatine
150 gr of cream of at least 33% of fat
225 g sugar 180 g water
75 g cocoa powder
pearls of chocolate (optional is to decorate)
