zest from 1/2 lemon
11/2 cups buttermilk
1 egg
1 egg white (2 tbsp liquid egg whites)
1/3 cup low fat cottage cheese, rinsed and drained
2 tbsp brown sugar (you could also add 1 tbsp more, if you like your pancakes sweet)
11/2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
Fresh raspberries to serve
Maple syrup
