2 x Large Smoked Haddock Fillets. (Around 500g -600g)
1 x Large White Onion. (Preferably Spanish)
1 x 400g Tin of Chopped Tomatoes
500ml x Whole Milk
Knob of Butter
Salt and Pepper.
For the White/Bechamel Sauce:
25g x Butter
25g x Plain Flour
100ml x Double Cream
150g x Grated Cheddar Cheese.

For the topping:
200g x Grated Mozzarella
150g x Grated Mature Cheddar Cheese.
