zest of one lemon
3 eggs
½ teaspoon vanilla extract
¾ cup buttermilk OR ¾ milk + 1 tablespoon lemon juice or white vinegar
2 cups fresh blueberries
2½ cups flour
2 teaspoon baking powder
1 teaspoon salt

Lemon Glaze:
2 cup powdered sugar
3 tablespoons water, more if needed to make it easier to spread
¼ teaspoon vanilla, optional
