Ingredients

Makes 1 6" round, 2-layer cake

Cake:
1¼ cups + 2 tablespoons all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¾ cup + 2 tablespoons granulated sugar
8 tablespoons unsalted butter, room temperature
½ cup coconut cream
2 eggs, separated
½ teaspoon vanilla extract
½ cup buttermilk (see notes)
pinch of salt

Cream cheese frosting:
1 8 oz. package cream cheese, room temperature
4 tablespoons unsalted butter, room temperature
¼ cup coconut cream
1 cup powdered sugar
½ teaspoon vanilla extract

Finish:
2 cups shredded sweetened coconut
