1 1/2 cups warm water
1 tablespoon sugar
2 teaspoons kosher salt
2 1/2 teaspoons active dry yeast
22 ounces all-purpose flour
4 tablespoons butter, melted
10 cups water
2/3 cup baking soda
Egg wash (1 egg yolk + a splash of water)
Toppings (salt, cinnamon sugar, Parmesan/garlic, etc)
