Serves: 8 cups

Total Time: 55 mins

4 cups oatmeal (not quick oats)
11/2 cups shelled pistachios
1 cup sweetened flaked coconut
1/3 cup pumpkin seeds
½ cup brown sugar
1/3 cup maple syrup
1/3 cup extra virgin olive oil
11/2 cups dried fruit of your choice ( I used cherries and golden raisins)
