1 ½ cups frozen corn kernels
1 teaspoon ground cumin
1 teaspoon smoked paprika
pinch of cinnamon
½ teaspoon salt, or to taste
pinch of cayenne, or to taste
1 tablespoon tomato paste
1 cup quick cook brown rice*
1 (14 ounce) can fire-roasted diced tomatoes, drained well
1 (15 ounce) can black beans, drained and rinsed
2 ½ cups low sodium vegetable broth
1 to 2 cups freshly shredded cheddar or pepper jack cheese
chopped fresh cilantro, for garnish
