2-3 fresh sausages, in casings and sliced (I used marguez, but Italian, or turkey sausage will work)
1 tablespoon vegetable or olive oil
1 small onion, chopped
2-3 cloves garlic, minced
1 tablespoon butter
¼ cup all purpose flour
2 cups milk (I used skim, but you can use whatever your preference)
2 cups shredded cheddar cheese
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon fresh black pepper
