3 teaspoons lemon zest
1/2 teaspoon pure lemon extract
3/4 cup buttermilk
2 eggs, at room temperature

Filling:
1/2 cup raspberry jam

Whipped Cream Frosting:
2 cups heavy whipping cream
2-3 tablespoons granulated white sugar or to taste
1 teaspoon vanilla extract
